How this shakkar came to be

Shakkar occupies a space that most people do not even know exists. Coarser than refined sugar, finer than jaggery. Less processed than white, more versatile than brown. In traditional Indian households — especially across Rajasthan, UP, and Madhya Pradesh — shakkar was the everyday sweetener. It went into the morning chai without a second thought, into temple prasad without exception.
